Rubén Osorio was born in New York to a Cuban mother and Spanish father. From his Hispanic roots was born an early passion for cooking, guided by his maternal grandmother.

His whole life has been marked by an extreme creativity that he eventually channelled into cooking, his passion.

A finalist in several national competitions such as Chef of the Year competition and the National Cooking Competition of Villarcayo, and winner of several miniature cooking competitions, he expects nothing and expects everything, and is content to see every customer that comes through the doors of Ergo leave with the memory of a unique experience.
