Raúl runs his own restaurant, in Benicarló (Castellón), and has held a Michelin star since 2017. His cuisine is clear and traditional, based on avant-garde techniques, with the focus always on the product: “We cook as we think but we don’t think as we cook.”
Resino designs a new menu six times a year and always serves the very finest cuisine, which varies according to the season and his inspiration.
For this regularly-changing menu of 19 dishes, he mainly uses specialities from the sea between Barcelona and Valencia, as well as the fresh ingredients offered by the fertile Valencian soil. In 2016, his cuisine won him the Chef of the Year award.
