Miguel Ángel is considered one of the values of Spanish cuisine. Self-taught, he practices a natural, artisan cuisine, derived from the landscape, he is determined to put in value everything that offers his closest environment, sensitivity and naturalness in each elaboration, his proposal is guided by the tireless rhythm of nature that with the changing Seasons offers new ingredients.
He feels admiration for the nearby product, managing a network of small local producers that supply their kitchen with natural products, often obtained from respect for the environment and its conservation.
